Pasta Fagiole (Macaroni and Red Beans)

2 tablespoons of olive oil

1 onion

1 teaspoon  - 1 tablespoon of garlic depending upon personal preferance

Meal in a pot

1  15 oz can of  Red Kidney Beans

1  15 oz can of tomato sauce

salt and pepper to taste

Parmesan cheese for garnishment

 

  1. Using olive oil Sauté garlic and onions lightly in a saucepot.
  2. Add 1 full can of Progresso Red beans with liquid and one can of water
  3. Add 1  15 oz can of tomato sauce and 1 can of water
  4. Add spices (pepper)
  5. Bring above to boil and then add 2 cups of ditalini pasta (very small tubes)
  6. Cook 12 minutes (al dente)
  7. Stir and serve with parmesan cheese

Cut up, diced, or sliced vegetables may be added

This receipe may be prepared ahead of time. It can be served with some plain Italian bread or garlic bread
