Bean and Tomato salad
1 lb fresh string beans
1 large tomato chopped
1 small bunch of scallions cut diagonally
½ cup of oil
¼ cup wine vinegar (I have used apple cider vinegar)
1 ½ T of soy sauce
½ tsp of sugar
½ tsp of ginger root (keep in a freezer)
1 clove of minced garlic
1/8 tsp salt
¼ tsp pepper
Trim the stems off the beans. Steam lightly, until crisp and tender. Combine in bowl with scallions and tomato. In a small bowl whisk together remaining ingredients. Pour over vegetables and mix well. Chill until serving time. Might be necessary to drain excess fluids before serving.
