Sherry Cream Bars
4 oz baking chocolate 1 cup butter
4 eggs 2 cups sugar
½ tsp of salt 1 teaspoon of vanilla
1 cup sifted flour
Method:
Preheat oven to 325
Melt chocolate and butter over boiling water, let cool. ( do this in the microwave)
Beat eggs until light; add sugar slowly. When sugar is beaten in, add the chocolate mixture, flour sifted with salt, then vanilla. pour into greased and lightly floured
9×13 pan. Bake 25 minutes. Cool. (This can be frozen) You can make the recipe up to this point and freeze it. Or take the recipe to completion and freeze)
Frosting
½ cup butter 4 cups confectioner’s sugar
¼ cup heavy cream (one small box)
4 tablespoons of sherry 1 cup chopped walnuts
Method:
Beat butter and sugar. Together add cream and sherry gradually. When light and fluffy, add walnuts. Mix well. Spread over the base. Chill in refrigerator.
*** I used one of the frosting recipe to do two bases….
Chilling the bar cookie before cutting and serving makes everything easier.
