Roasted Chicken

There are two strategies for this meal

A) Roast two whole chickens ( or two cornish hens) instead of one.

    I usually season my chickens with salt, pepper, paprika, parsley. I put all of these ingredients inside the cavity in addition to the outside of the chicken

    I cook the chicken according to the directions on the chicken wrapping in terms of the temperature and time per pound.  I have been able to make two Perdue Ovenstuffers in one roasting pan.

    I imagine that you can do the same with cornish hens. Often there are two cornish hens to a package. If you have an extra one, Freeze it.

    Never stuff the chicken or hen  you plan to freeze.

    Once the chicken has cooled enough to handle, put it  in a tupperware that is made to be put in both the freezer as well as the microwave.  All plastic food holders (including some Tupperware) cannot transition from one to the other. They will crack.   A week or a month later, it is like having a chef at home.  Take the frozen, roasted chicken, from the freezer , to the microwave to defrost.  Once defrosted, warm up the roasted chicken in that container with the top on it vented.  It is a treat for a busy family, working parents, and a single person, cooking for one.

This is particularly a great way to insure that on those busy days, it is possible to eat healthy and not feel pushed to eat fast food that is not that healthy for you or your family.

 

B) Using some Imagination when preparing a roaster / or any whole chicken / cornish hen / turkey

    Slice some lemon, lime, both, sliced orange, sliced apples, whichever and whatever suits your fancy. Stuff the fruit in the bird's cavity. Bake / Roast / Bar-b-Que, Rotisserie the chicken

     Dispose of the fruit after cooking. It will act as a magent for some of the melted fat.

    The chicken will take on a mild flavor from the fruit. This does not elevate blood pressure, or add calories. It is particularly nice when you use the chicken in other dishes.  The fruit enhances the flavor of the chicken. It does not

    over power it.
