Stuffed Pork Chops
1 double cut pork chop (thick pork chop)
5 dried apricots
Dab of butter
Salt and pepper
(Per person)
Using a sharp knife, insert it into the side of the pork chop. Move the knife as if it were a toggle switch. The aim is to enlarge the space inside of the pork chop while keeping the opening as small as possible.
Stuff the apricots inside.
Place a dab of butter on top of each chop. Either broil or roast until done, approximately 30 minutes
If you prefer the sweeter taste, pour several tablespoons of Saucy Susan on top of the pork chop the last ten minutes while cooking.
350 degrees / 30 minutes
