Taco Tartlets
Preheat oven 425 degrees
Mini muffin pans
1 lb of lean ground beef
2 Tablespoons of ice water
2 Tablespoons of Taco seasoning mix
1 Cup shredded cheddar cheese
1/2 pint of sour cream
2 Tablespoons of taco sauce
3/4 cup coarsely crushed tortilla chips
1 cup shredded cheddar cheese
a)Mix the lean beef, ice water and the taco seasoning.. Press into the sides of a muffin pan (small muffins)
The meat becomes the crust
b) Combine 1/2 pint of sour cream, 2 tablespoons of taco sauce and 3/4 cup coarsely crushed tortilla chips.
c) Sprinkle with cheddar cheese
Bake at 425 degrees for 7 - 8 minutes.
Use a sharp knife to wiggle the taco tartlets out of the pan.
You can put them on a tray and serve immediately
Or put on a micro waveable plate to be re-heated in the microwave.
This tasty treat freezes very well.
