Broccoli Salad
2 small bunches broccoli
½ cup mayonnaise
1 Tbsp lemon juice
1 tsp dry basil
1 Tbsp chopped pimento
1 tomato chopped
¼ cup chopped green olives
Salt and pepper to taste
Trim broccoli and discard the tough stems. Cook in boiling salted water until barely tender.
An alternate method is to use your microwave to cook your vegetables, uses less water and nutrients stay in the vegetable.
Drain well and cool. Separate into florets and slice the tender stalks. Blend mayonnaise, lemon juice, basil, pimento, tomato, olives, salt and pepper. Mix with the broccoli. Chill slightly before serving
Serving for 4-6
