Pecan Tartlets

Pecan Tartlets

Crust:     2 cups sifted flour

                1 tsp salt

                2/3 cups Crisco + 1 T

                ¼ cup water

Mix these ingredients with a fork to make the crust.

I use my Kitchen Aid to mix it.

Shape into the mini muffin pans. I make little balls. Put a ball into each mini muffin and press it to the bottom and sides of the mini muffins.

                               

Pecan Filling

4 eggs           1 cup sugar                       1 tsp vanilla

½ tsp salt       2 Tbsp + 1 tsp butter        ¼ - ½ Cup pecans

1 ½  Cups dark corn syrup

Whip eggs until blended. Add sugar, salt and corn syrup. Add cooled butter and vanilla. Mix just enough to blend. Spread nuts on the bottom of small pans. Pour in filling

Bake at 350 degrees for 20 minutes
