Neopolitan Ribbon
Bake at 350 degrees for 15 minutes
1 pkg pound cake mix 2 eggs
Liquid as directed on the cake mix box
Yellow, red, and green food coloring
½ cup apple jelly ¼ cup crme de cocoa
2 tablespoons butter or margarine
3 tablespoons light corn syrup
¼ cup water 6 oz semi sweet chocolate pieces
Prepare pound cake mix with egges, liquid following label directions. Measure 1 cupful of batter into a small bowl; ting a birhg yellow with a few drops yellow food coloring. Repreat the remaining batter , tingitn pink and green with food coloring; pour into three greased 9×9x2 pans (Or bake one layer; wash pan; repeat twice)
Bake layers in a moderate oven of 350 degrees for 15 minutes, or until cake springs back when lightly pressed with fingertip. Cool in pans ten minutes. Loosen layers, around edges with sharp knife and turn out on to wire racks, cool completely
Trim cake layers to square off edges. Cut each layer into 2 even trips, about 4” wide.
Combine apple jelly and crème de cocoa. In a small saucepan. Heat slowly
To make cake: Place green strip on cookie sheet. Spoon apple syrup over cake. Top with yellow strip; spoon apple syrup over; then top with pink strip and more apple syrup. Repeat with three more strips of cake. Brush with syrup.
Combine butter or margarine, corn surup and water in a small saucepan. Bring to a boil. Remove from the heat. Stir in chocolate pieces until melted. Beat mixture for about three minutes or until stiff enough to spread on cakes.
Frost cake with chocolate and sprinkle with chopped pistachio nuts
