Very Special Onion Soup

 

1 ½ lb sliced onions                   3 Tablesppons butter

1 Tablesppoon oil                      1 teaspoon of salt

 

¼ teaspoon of sugar                  3 Tablespoons of flour

 

quarts stock  = ½ beef + ½ chicken

 

½ Cup Dry white wine                Salt and Pepper

 

Croutons / French Bread with oil sliced / dry in oven

        1 Cup grated cheese: ( Swiss, Mozzarella, Parmesan

 

 

Sweat the onions slowly in butter and oil for 15 minutes,

Raise heat to moderate; uncover; add salt and sugar. Cook, stirring frequently until deep golden brown – 20 to 30 minutes

Off Heat: blend in the flour; cook 3 minutes Add stock, wine and seasonings to taste. Simmer 30 minutes. Check seasoning. Pour into oven proof dish; float croutons on top and cover with cheese. Bake at 325 degrees for 15- 20 minutes. Run under broiler to brown top and serve.. Serves 6 – 8 guests
