- Broccoli Salad
Broccoli Salad
2 small bunches broccoli
½ C of mayonnaise 1 T lemon juice
1t dry basil 1 T chopped pimento
1 tomato chopped salt & pepper to taste
¼ C chopped green olives

3/4 lb peeled, trimmed carrots
¼ lb snow peas trimmed
1 T butter 2 T sesame seed
½ t garlic 1 T light soy sauce

2 lbs of chicken wings 1/3 cup soy sauce
½ Cup of honey 1 T oil
2 T ketchup ¼ t or 1 clove of garlic
1 t minced fresh ginger

8 slices of white bread buttered / crusts trimmed
½ lb grated sharp cheddar cheese
2 eggs 1 t salt ¼ t dry mustard
2 cups milk 3 t melted butter ½ C minced onions
- Easy Ice Cream Cake
Using a boxed cake mix. Prepare 2 round 9” cake pans as directed on the cake mix box.
Allow the cakes to cool after baking. Remove one of the cakes from the pan. Place it on a dish that can be put in the freezer.
- Salsa Puttanesca (Harlots' Sauce)
2 T Olive oil 2 cloves of garlic
1 cup sliced celery 1 chopped red pepper
In a sauce pot, saute for 10 minutes
4 Cups Plum Tomatoes
Add and simmer for 10 minutes

- Basic Baked Fish fillet
Fish fillet of your choice
Select either flour, plan or seasoned bread crumbs, or corn flake crumbs

½ pound of mozzarella in the ball form (sliced into small chunks.

1 loaf Italian brad, unseeded
10 cloves garlic

3 Tbsp butter

Cut bread into 1” diagonal slices, but not all the way through. Puree garlic and oil in processor. Slather over cut sides , top and side crust of bread. Place directly on the rack of a preheated, 350 degree oven for 10 – 12 minutes. Place pan under the bread to catch the drips.
- Butter Squares
1 box yellow cake mix (or chocolate)
½ cup butter
1 egg
8 oz cream cheese
3 ½ cups sifted confectioners sugar
2 eggs
Combine the cake mix, butter and 1 egg thoroughly. Press mixture into a greased 13” x 9” pan. Mix the cheese, sugar and eggs together. Pour this mixture over the cake mixture.
- Chicken Teriyaki
1 ½ pounds boneless chicken breast or thigh
2 tablespoons flour
2 tablespoons vegetable oil
Teriyaki sauce:
teaspoons soy sauce
2 teaspoons Mirin ( Japanese sweet cooking wine)
1 teaspoon sugar
- Chicken Saltimbocca
8 chicken cutlets
½ tsp sage
black pepper
8 thin slices of proscuitto
¼ cup butter
¼ cup dry white wine
Place each cutlet between sheets of wax paper and pound to ¼ “ thickness. Sprinkle top of each cutlet with sage and pepper. Top with slice of prscuitto. Cutting to fit size of chicken cutlet. Secure with tooth pick.
- Blondie Brownies (no Chocolate)
½ cup shortening ½ tsp baking powder
1 Tbsp milk 1/8 tsp salt
1 cup brown sugar 1 tsp vanilla extract
1 egg beaten ½ cup chopped walnuts
1 cup all-purpose flour

Crust: 2 cups sifted flour
1 tsp salt
2/3 cups Crisco + 1 T
¼ cup water
Mix these ingredients with a fork to make the crust.

- Italian Anise Pillows
4 cups of flour
1 cup sugar
1 cup butter
3 eggs
5 Tablespoons baking powder
1 Teaspoon Anise
Combine all ingredients.
Pre heat the oven for 400 degrees
Use a teaspoon to create a 1 ½” oval.
- Taco Tartlets
Preheat oven 425 degrees
Mini muffin pans
1 lb of lean ground beef
2 Tablespoons of ice water
2 Tablespoons of Taco seasoning mix
1 Cup shredded cheddar cheese
