- Traditional Beef Chili
INGREDIENTS
5 pounds beef chuck or beef round
Salt according to taste
Pepper according to taste
Vegetable oil as needed
1-1/2 pounds small, diced onion
1/2 ounce minced garlic
1 can of your favorite beer
16 ounces tomato puree
1 quart beef broth
8 ounces diced green chilies
1-3/4 ounces minced jalapenos
2 ounces mild chili powder (or to taste)
2 Tablespoons hot chili powder (or to taste)
3 Tablespoons ground cumin (or to taste)
3 Tablespoons dried oregano
Sourdough bread ….If you want to hollow out to make a bowl to serve the chili
OR
Rice on the side
OR
Serve with Nacho Chips
• Shredded cheddar, chopped onions, sour cream and minced jalapenos for garnish

1 - 2 cans of Campbell's Cream of Mushroom Soup (reduced fat, if you prefer)
1/4 - 1/2 sour cream (reduced fat)
1/3 cup of Sherry ( I do not use cooking wines because they contain salt)
1 box of pasta / your personal choice
Cut the Chicken up into manageable size pieces to be eaten with a fork
