  • Broccoli Salad

    Broccoli Salad
     
    2 small bunches broccoli
    ½  C of mayonnaise                            1 T lemon juice
    1t dry basil                                            1 T chopped pimento
    1 tomato chopped                               salt & pepper to taste
    ¼ C chopped green olives

  • Jullienne Carrots

    Jullienne Carrots
     
    3/4 lb peeled, trimmed carrots
    ¼ lb snow peas trimmed
    1 T butter                                       2 T  sesame seed
    ½ t garlic                                         1 T  light soy sauce
     2 T chopped chives or scallions

  • Basic RICE that is not "basic"

    I use a rice maker because I find it easier when I am in a rush. It does not require to be watched for fear of burning.

  • Bean and Tomato salad

    1 lb fresh string beans    
    1 large tomato chopped
    1 small bunch of scallions cut diagonally
    ½ cup of oil
    ¼ cup wine vinegar (I have used apple cider vinegar)
    1 ½ T of soy sauce   
    ½ tsp of sugar
    ½ tsp of ginger root (keep in a freezer)
    1 clove of minced garlic
    1/8 tsp salt                
    ¼ tsp pepper

    4 skinless,boneless chicken breast halves           
    ¼ tsp ground pepper                         
    ¼ tsp oregano
    ¼ cup vegetable oil                    
    ½ cup dry white wine
    1 garlic clove

    ½ pound mushrooms, sliced      
    1 15 oz can or jar of artichoke hearts, drained and quartered
