- Bruschetta (Red)
1 loaf of Italian bread, unseeded
¼ cup of olive oil
tomatoes, cut up into very small pieces
½ pound of mozzarella in the ball form (sliced into small chunks.
- Bruschetta (White)
1 loaf Italian brad, unseeded
10 cloves garlic
1 ½ cup cream
1 cup Romano Cheese
3 Tbsp butter
1 Tbsp minced parsley
Paprika
Cut bread into 1” diagonal slices, but not all the way through. Puree garlic and oil in processor. Slather over cut sides , top and side crust of bread. Place directly on the rack of a preheated, 350 degree oven for 10 – 12 minutes. Place pan under the bread to catch the drips.
- Chicken Saltimbocca
8 chicken cutlets
½ tsp sage
black pepper
8 thin slices of proscuitto
¼ cup butter
¼ cup dry white wine
Place each cutlet between sheets of wax paper and pound to ¼ “ thickness. Sprinkle top of each cutlet with sage and pepper. Top with slice of prscuitto. Cutting to fit size of chicken cutlet. Secure with tooth pick.
- Fettucine Primavera
2 oz cauliflower, small pieces 6 oz sweet butter
2 oz broccoli, small pieces 1 garlic clove, chopped
2 oz julienne thin carrots 1 ½ heavy cream
2 oz julienne thin celery 3 oz diced gorgonzola

- Italian Anise Pillows
4 cups of flour
1 cup sugar
1 cup butter
3 eggs
5 Tablespoons baking powder
1 Teaspoon Anise
Combine all ingredients.
Pre heat the oven for 400 degrees
Use a teaspoon to create a 1 ½” oval.
- Traditional Italian Ricotta Cheese Cake
1 tablespoon sweet butter 2 teaspoons grated lemon rind
½ Cup graham cracker crumbs ½ cup sifted all – purpose flour
6 cups Ricotta 2 teaspoons vanilla extract
1 ½ cups sugar ½ cup heavy cream, whipped

- Delicious Escarole
1 head of escarole –> serves 2 -4
1/2 cup of raisins
1/2 – 3/4 cup of seasoned bread crumbs
olive oil (about 1/4 of cup)
Clean the escarole and make sure that all soil, or sand has been removed.

- Pasta Fagiole (Macaroni and Red Beans)
2 tablespoons of olive oil
1 onion
1 teaspoon – 1 tablespoon of garlic depending upon personal preferance
Meal in a pot
1 15 oz can of Red Kidney Beans
1 15 oz can of tomato sauce
- Grandma Aida's meatballs / meatloaf
1.5 pound of lean chopped beef
1.5 tablespoons of parsley, oregano, & basil
About ¾ cup of seasoned bread crumbs
¼ Gulden’s mustard
¼ Ketchup
Mix / bake in a 350 degree oven for about 45 minutes to an hour, depending upon the oven.
