Very Special Onion Soup
1 ½ lb sliced onions 3 Tablesppons butter
1 Tablesppoon oil 1 teaspoon of salt
¼ teaspoon of sugar 3 Tablespoons of flour
quarts stock = ½ beef + ½ chicken
½ Cup Dry white wine Salt and Pepper
Croutons / French Bread with oil sliced / dry in oven1 Cup grated cheese: ( Swiss, Mozzarella, Parmesan
Sweat the onions slowly in butter and oil for 15 minutes,
Raise heat to moderate; uncover; add salt and sugar. (…)
